SUGAR CAKE 
1 pkg. yeast dissolved in 1/2 c. lukewarm water
1 c. hot mashed potatoes
1 c. white sugar
1/2 c. shortening or butter plus 4 tsp.
1 c. potato water
Brown sugar
butter
Cinnamon
2 eggs

Mix potatoes, sugar, shortening and potato water. Add yeast mixture. Set aside and let rise until it is spongy in consistency. Add eggs which have been beaten. Mix in flour to make a soft dough. Place in a greased bowl and let rise until double in bulk. Divide dough evenly and spread out over greased pans. Let rise again. Spread brown sugar over dough in pans. Make indentations in dough with finger. Add butter over brown sugar layer. Sprinkle with cinnamon. Bake at 375 degrees until desired doneness, about 15 to 20 minutes.
