RHUBARB DESSERT | |
1 1/2 c. flour 3/4 c. butter 1 1/2 tbsp. sugar Pinch of salt Mix crust ingredients as you would a pie crust. Press into 9 x 13 inch pan. Bake at 400 degrees for 10-20 minutes until light brown. Set aside. FILLING: 1 7/8 c. sugar 3 3/4 c. rhubarb, cut fine 4 lg. egg yolks, slightly beaten 3 rounded tbsp. flour 1 1/2 tbsp. melted butter 1/4 tsp. salt 1 tbsp. cream or milk Mix filling ingredients thoroughly and cook about 8-10 minutes. Cool before putting on crust. MERINGUE: 4 lg. egg whites 8 tbsp. sugar |
