HOT SPINACH SALAD 
1 (10 oz.) pkg. fresh spinach (can buy up to 1 lb.)
1 egg yolk, beaten
2-3 cloves minced garlic
4 oz. oil (preferably olive oil)
1 tsp. Dijon mustard
1 tsp. Worcestershire sauce
Juice of 1/2 lemon
Salt and pepper to taste
Grated Parmesan cheese to taste

Mix all of the above ingredients (except spinach) together. Cook 8 slices bacon; remove and chop. Save grease and pour in 2 ounces wine vinegar and 2 teaspoons sugar; boil and remove.

Pour over salad mixture, then add bacon and toss. Serve immediately.
