JALAPENO CORNBREAD 
1 c. cornmeal
1 c. milk
1/2 tsp. baking soda
1 tsp. salt
1 c. creamed corn
3 or more diced jalapeno peppers
2 eggs
1 c. chopped onion
1/2 lb. grated cheddar cheese
1/4 c. oil

Muffins can be made from this recipe, but I find it to be tastier cooked in a 10 inch cast iron skillet.

Place oil in skillet and heat. Mix the remaining ingredients together. Pour hot oil into cornbread mixture and stir. Pour cornbread mixture into the hot skillet and cook for about 45-60 minutes or until golden brown in 350 degree oven.
