HOW TO MAKE ROUX 
2 tbsp. butter, oil or bacon drippings
2 tbsp. flour

(Flour and butter or oil is 1 to 1 ratio.)

Melt butter in skillet. Add the flour and stir constantly until dark chocolate brown, being careful not to burn. If there is the slightest indication of over-browning, dispose of the Roux and start over. Even a slightly-burned sauce will ruin a savory dish. To this basic Roux, add seasonings and stock to make various sauces and gravies.

I didn't read all the recipes but an ole Cajun taught me to put raw onions in my roux (when it is chocolate colored) to keep it from burning. It works!
