LEMON MERINGUE PIE 
1/4 c. corn starch
1 c. sugar
1 c. boiling water
2 egg yolks, beaten lightly
1 tbsp. butter
1 lemon rind and juice (1/3 c.)

MERINGUE:

2 tbsp. sugar
2 egg whites, stiffly beaten

Mix sugar and corn starch, add boiling water slowly. Boil until clear, stirring constantly. Add butter and gradually add egg yolks. Cook over boiling water until it holds it's shape. Add lemon. Pour lemon mixture into prebaked pie crust. Top with meringue. Bake for 15 minutes (to avoid "dew drops") in 300 degree oven. Makes 1 (7 inch) pie.
