CORNISH PASTIES 
5 c. flour
1/2 tsp. salt
1 c. lard or any solid shortening
4 med. potatoes, sliced
2 med. onions, sliced
1 lb. coarsely ground round steak
Butter to taste
Salt to taste
Pepper to taste

Make up pastry from flour, 1/2 teaspoon salt, lard and cold water, being careful not to make mixture too moist. It should hold together well enough to leave the sides of the bowl as mixed.

Divide into 4 sections. Roll each out as for pie, 1/4 inch thick, keeping as round as possible. Place, on 1/2 of a circle, a layer of thinly sliced potatoes and onions. Cover with 1/4 pound of ground beef. Top with butter, salt and pepper to taste. Fold unfilled half over filling and seal by pinching with fingers or pressing with tines of a fork to make a half moon. Cut a small hole in center of each. Bake about 30 minutes in a preheated oven, approximately 400 degrees.
