SPUDNUTS FOR LARGE GROUP 
2 c. mashed potatoes
1 1/2 c. sugar
1 1/3 c. shortening
6 eggs
1 tsp. lemon extract
2 tsp. salt
1 tsp. vanilla
1 c. flour
Deep oil for frying

Mix the above ingredients together. Scald and cool 4 cups milk; add 4 dry yeast cakes dissolved in 1/2 cup warm water and add to the above mixture. Add 12 to 14 cups flour until a soft dough. Let stand one hour. Roll out 1/2" thick, cut with large doughnut cutter and let raise light. Fry at 375 degrees.

GLAZE:

3 c. powdered sugar
2 tbsp. honey
1 tbsp. vanilla
2/3 c. water
1 tsp. cream of tartar
1/2 tsp. gelatin dissolved in water

Add 2 tablespoons vinegar oil for frying. This will permit Spudnuts from becoming greased soaked.
