GWEDUC FRITTERS 
1 gweduc, chopped fine
1 c. all-purpose flour, sifted
1 tsp. baking powder
1/2 tsp. salt
1/8 tsp. pepper
Dash of nutmeg
1/3 c. clam nectar
2 eggs, beaten
1/3 c. milk
2 tsp. butter, melted
Cooking oil
Lemon wedges

Sift flour, baking powder, salt, pepper and nutmeg together. Add clam nectar, eggs, milk and beat thoroughly. Fold in butter and chopped clams. Drop by spoonfuls into hot deep fat (375 degrees on frying thermometer) and fry until golden brown. Drain. Serve with lemon wedges. Makes 4 servings.
