HEALTHY LOW-FAT MACARONI SALAD 
2 c. firm cooked elbow or shell macaroni
1/4 c. low calorie or Lite French dressing
1 c. cottage cheese (no fat, no cholesterol, Axelrod brand)
1/4 c. diced green pepper
2 tbsp. finely chopped onion
1/4 c. diced pimento
2 tbsp. chopped parsley

Rinse and drain macaroni. Combine macaroni and French dressing. Marinate a few minutes. Add remaining ingredients. Mix gently but thoroughly. Garnish with watercress or chopped olives, if desired. Serves 6.
