POTATO FLAKED WALLEYE 
Walleye fillets or cheeks
instant mashed potato flakes
2 egg whites
seasoning (I use regular seasoning salt and/or garlic & herb)

In a container mix potato flakes with seasoning of your choice.

Separate eggs using only the whites, yolk can be used for homemade tartar sauce.

Simply dip fillets in the egg white and then coat in the flake mixture.

Cook in 2-inches oil at medium to high heat and turn 2 to 3 times till golden brown.

Note: This method keeps pan clean with no unwanted smoke, making it great for indoors.

Awesome with BAD-ASS beans!

BAD-ASS BEANS:

1 onion, diced
1-2 cans beans (your choice)
mustard
seasoning salt
hot sauce

Sauté diced onions over medium heat. Add 1-2 cans beans. Add mustard, seasoning salt and hot sauce, all to taste. Stir until heated through. Enjoy!
