ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. sugar
2 c. grated, peeled zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
1 c. chopped nuts (walnut, pecan and almond mix)

Beat eggs; add oil, sugar, zucchini and vanilla. Mix well. Add remaining ingredients. Mix until blended. Bake in 2 greased loaf pans or angel food pan at 350 degrees for 1 hour.
