IRISH POTATO PUFF | |
1/4 c. butter 1 c. bread crumbs 1 tsp. salt 1 tbsp. grated lemon rind 1 tsp. lemon juice 3 egg yolks 1 c. milk 3 egg whites, beaten stiff 3 c. mashed potatoes 1/4 c. grated cheese Combine butter and crumbs. Mix until well blended. Press on sides and bottom of round baking dish (casserole). Combine salt, lemon rind, lemon juice and egg yolks. Blend well and stir in milk. Fold in egg whites and gently fold mixture into mashed potatoes, along with half of grated cheese. Spoon into casserole and sprinkle remaining cheese on top. Bake in medium oven, 350 degrees, 30 minutes or until firm and delicate brown on top. Serve hot. Serves 6. |
