ZUCCHINI PIE 
3 c. diced zucchini (2 lg. zucchini)
1 lg. chopped onion - med. fine
1/2 c. grated Parmesan cheese
1/2 c. diced Cheddar cheese (less than 1/2 lb.)
1/2 c. salad oil
1 c. Bisquick mix
4 beaten eggs
3-4 tbsp. minced parsley
1 tsp. salt
1/2 tsp. pepper

Grease 9 or 10 inch pie plate or 9 x 9 inch pan. Combine all ingredients until zucchini is covered with batter. Bake in 350 degree oven for 35-40 minutes until lightly brown.
