REUBEN CASSEROLE 
1 (6 oz.) can of sauerkraut
1 c. sour cream
1/2 c. chopped onion

Mix together and put in a 12 x 9 pan. Crumble a 12 ounce can of Libby's corned beef on top. Sprinkle 3/4 cup shredded swiss cheese, add 8 to 10 slices rye or pumpernickle bread broken into chunks. Pour 1/2 cup melted butter over bread, bake at 350 degrees for 30 minutes uncovered.
