PEACHES AND CREAM CHEESE CAKE | |
3/4 c. flour 1 tsp. baking powder 1/2 tsp. salt 1 (3 oz.) pkg. vanilla pudding (non instant) 3 tbsp. butter, softened 1 egg 1/2 c. milk 1 (16 oz.) can sliced peaches, drained (reserve juice) 8 oz. cream cheese, softened 1/2 c. sugar 3 tbsp. peach juice 1 tbsp. sugar 1/2 tsp. cinnamon Grease 9" pie pan. Mix first 7 ingredients and pour into greased pan. Place fruit on top of batter. Beat cream cheese, sugar and juice for 2 minutes. Spoon over fruit. Mix together sugar and cinnamon and sprinkle over cake. Bake at 350 degrees for 30 to 35 minutes. May be served warm or cold. Great as a leftover for breakfast. |
