BEEF - SPINACH CASSEROLE 
1 pkg. frozen spinach
1 lb. ground chuck
1 med. onion, sliced
1 (8 oz.) can tomato sauce
1 tsp. parsley flakes
Salt & pepper to taste
1/2 c. bread crumbs
1 c. Ricotta cheese
2 tbsp. grated Parmesan cheese
2 eggs
1/4 tsp. nutmeg
4 oz. Mozzarella cheese

Cook spinach as directed and drain. Cook beef and onion, drain fat. Add tomato sauce, salt, pepper and mix. Cook 3 to 5 minutes. Add bread crumbs. Spread this mixture in 2 quart baking dish, (except spinach). To drained spinach, add Ricotta, Parmesan, eggs, nutmeg, salt and pepper. Spread this over meat mixture. Add Mozzarella on top. Bake at 450 degrees about 10 to 15 minutes. (May all be mixed together rather than layered.)
