MEXICAN BURRITO PIE 
1 (16 oz.) can refried beans
1 c. biscuit mix (Bisquick)
1/4 c. water
1 lb. ground beef
1 c. thick & chunky salsa
1 c. shredded Monterey Jack or Cheddar cheese
1/2 c. sour cream (optional)

Combine beans, biscuit mix and water in a medium bowl; mix well. Spoon mixture into lightly greased pie plate to form a shell. Set aside.

Cook ground beef until browned, drain well. Spoon meat mixture over beans. Top with salsa. Bake at 375 degrees for 20 minutes. Sprinkle with cheese and bake an additional 10 minutes. Serve with sour cream. Yield: 6 servings. Have big eaters? - Yield 4 servings.
