PRUNE CAKE | |
1 1/2 c. sugar 2/3 c. oil 3 eggs 1/2 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. cloves 1 tsp. nutmeg 2 c. flour, sifted 1 c. mashed, cooked prunes 1 c. buttermilk 1 c. walnuts 1 tsp. vanilla Mix dry ingredients. Mix buttermilk, oil and slightly beaten eggs. Add dry ingredients to liquid ones. Mix together well. Bake at 325 degrees for 1 hour 45 minutes. TOPPING: 1/2 pt. whipping cream 1 sm. instant vanilla pudding Beat on medium 2-3 minutes; pour over cake. (OR) FROSTING: 1 lb. box confectioners sugar 8 oz. soft cream cheese 1 stick butter 2 tsp. vanilla Mix and frost. |
