APRICOT HERB CORNISH HENS 
4 (1 to 1 1/2 lb.) Cornish hens
3/4 c. butter, softened
1/2 tsp. marjoram leaves
2/3 c. apricot preserves

Heat oven to 350 degrees. Remove giblets and rinse birds. In small bowl stir together butter and marjoram. Blend. Place 1 tablespoon of blend mixture on breast meat directly under the skin. Tuck wings under and tie legs. Place in 9 x 13 baking pan, breast side up. In 1 quart saucepan, melt remaining blend mixture. Brush birds with some blend mixture.

Cover with foil and bake 1 hour and 25 minutes to 1 hour and 45 minutes. Meanwhile, add apricot preserves to remaining melted blend mixture. Heat until melted. Cook uncovered during last 15 minutes of baking. Brush lightly with sauce. Continue baking until golden brown. Serve with remaining sauce. Serves 4.
