CORNISH HENS WITH YOGURT &
SPICES
 
4 Cornish hens
2 c. plain yogurt
1 lg. onion, grated
1 clove garlic, minced
5 tsp. lime juice
1 tsp. BLAIR chili powder
1 tsp. BLAIR paprika
2 tsp. BLAIR cinnamon
2 tsp. coriander
2 tsp. cardamom
1/2 tsp. ground cloves
1/2 tsp. BLAIR nutmeg
1/2 tsp. cayenne pepper
Salt to taste
2 tsp. olive oil
2 tsp. butter

In a large bowl, combine all ingredients except hens, olive oil and butter. Stir well to combine. Place hens in yogurt mixture, turning several times to coat well. Cover bowl and refrigerate 12 hours, turning once. Preheat oven to 325 degrees. Melt butter and olive oil until sizzling. Scrape yogurt sauce off the hens. Place breast-side down in oil and brown. Put hens in baking dish, pour yogurt sauce over and bake 50 to 60 minutes or until done. Serve over wild rice. Yield: 4 servings.
