HOT TAMALE PIE | |
1 lb. ground beef 1 med. sized onion, chopped 1 (No. 2) can whole kernel corn 1 can condensed tomato soup 1/2 tsp. salt 1/2 tsp. pepper 1 tbsp. chili powder (may add more, to suit own taste) 1 c. self-rising cornmeal 1 tbsp. self-rising flour 1/3 c. milk 1/2 c. water Brown ground beef and onion until beef is crumbly. Drain off excess fat and pour into a 2 quart casserole. Stir in corn, tomato soup, salt, pepper and chili powder. Mix meal, flour, milk and water to make a thin corn bread batter. Pour over top of the meat mixture and bake in 450 degree oven for about 30 minutes, until corn bread is brown. Approximately 6 servings. |
