MY FAVORITE ONION SOUP WITH
CHEESE CROUTON
 
1/4 c. butter
4 lg. yellow onions, thinly sliced
1/2 tsp. sugar
6 c. canned beef broth
1 tbsp. Worcestershire sauce
1/2 tsp. paprika
Salt & freshly ground pepper
1/2 to 1 c. white wine
4 to 6 slices French bread
1/4 to 1/2 c. Gruyere cheese, freshly grated

Heat butter in large saucepan over medium heat. Add onion and sugar and saute until golden. Add broth, Worcestershire sauce and paprika and bring to boil. Reduce heat and simmer uncovered 15 to 20 minutes. Meanwhile, toast bread on one side under broiler; spread untoasted side with butter and sprinkle with cheese. Return to broiler until lightly toasted. Ladle soup into bowls and float toast.

Makes 4-6 servings.
