SOUR CREAM ENCHILADAS 
2 lbs. ground beef
2/3 c. onion, chopped
10 oz. can mild enchilada sauce
16 oz. can tomato paste + 2 cans water
10 oz. can hot enchilada sauce
1 can diced green chilies
1 pkg. lg. floured tortillas
1 lb. Cheddar cheese, shredded
1 lg. container sour cream

Fry ground beef and onions. Drain. Add the next four ingredients and mix well. Heat and simmer for a few minutes.

On the tortillas, spread a heaping tablespoon sour cream and beef mixture in middle. Reserve some meat. Sprinkle cheese on the meat mixture. Roll up the tortillas. Place in 9x13 pan. Spread remaining sauce on top and sprinkle cheese all over. Bake at 350 degrees for 20 minutes.
