BANANA-APRICOT BARS 
1/2 c. sugar
1 (10 oz.) jar apricots
1 tsp. vanilla
1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. brown sugar
2 beaten eggs
1 3/4 c. flour
1/4 tsp. salt
2 bananas, mashed

I you use self-rising flour, omit the baking powder and baking soda.

Cream together the sugar, brown sugar; then add the jar of apricots, beaten eggs and vanilla. Sift the flour, baking powder, baking soda, and salt together. After mashing the bananas, set aside. Then alternately add 1/2 of the flour, etc. and half the bananas.

Pour into buttered, floured 13 x 9 inch pan and bake for 30-40 minutes at 350 degrees. Cool before you cut. You can sprinkle with powdered sugar or your own glaze. Makes 2 1/2 to 3 dozen.
