WILTON'S PEANUT SOUP | |
1 qt. chicken stock (or water if vegetarian) 3 carrots, chopped 2 yams, peeled & sliced 2 stalks celery, chopped 1 med. onion, chopped 1 clove garlic, minced 1 (8 oz.) jar peanut butter 1 c. half and half Salt & pepper to taste Simmer carrot, celery, onion, garlic and yams in chicken stock, until soft. Blend until smooth. Add peanut butter, seasonings and half and half. Garnish with crumbled bacon or sour cream and chives, if desired. |
