HOMEMADE PEPPERMINT PATTIES 
1 (24 oz.) pkg. chocolate bark (in Walmart baking section)
1/2 (14 oz.) can Eagle Brand sweetened condensed milk
1 (1 lb.) box confectioners' sugar, divided
2 tbsp. peppermint extract (McCormick's)

Put chocolate bark in a double boiler to melt. Prepare a baking sheet with waxed paper.

Mix 1/2 can sweetened condensed milk with peppermint extract, slowly add confectioners' sugar till you get a soft dough, but not a sticky dough. Spread one thin layer of chocolate bark on the wax paper from side to side completely covering paper. Let cool, turn the remaining bark on low.

Lay out a sheet of plastic wrap on a flat surface. Sprinkle with confectioners' sugar. Lay out peppermint mixture and flatten with hands. Sprinkle confectioners' sugar on top and cover with plastic wrap.

Proceed to roll out to a thin 1/4-inch sheet. When rolled out lay on top of chocolate bark on the sheet that has cooled. Cover patty mixture with remaining chocolate bark and cool.

Cut into small pieces and serve. Best kept covered in refrigerator.
