ORANGE YAM PUFF 
3 lg. oranges
4 med. size yams, cooked
1 tbsp. grated orange rind
1/2 tsp. nutmeg
1 tbsp. sugar
1/2 tsp. salt
1/3 c. cream, scalded
2 tbsp. butter

Halve oranges crosswise, remove all pulp and save shells for orange cups. Scallop edges with scissors. Peel and mash yams, add grated rind, nutmeg, sugar, salt, 1 tablespoon melted butter, cream and 1/2 cup chopped orange pulp. Beat until fluffy and put in orange cups; dot with remaining butter. Put in 450 degree oven for 5 minutes.
