FILLETS AU GRATIN 
4 (4 oz.) fish fillets (sole, halibut, roughy, flounder)
1/4 tsp. pepper
2 sm. zucchini, sliced
2 med. tomatoes, sliced
3 tbsp. sliced green onions
1/2 c. fresh bread crumbs
2 tbsp. melted butter
2 tbsp. lemon juice
1/2 c. freshly grated Parmesan cheese

Place fillet in non-stick sprayed baking dish. Season with pepper. Cover with zucchini, tomatoes and onions.

In small bowl, combine bread crumbs, butter and lemon juice. Toss together and spread over vegetables. Top with cheese and bake at 425 degrees for 20-30 minutes. Serves 4.
