BRAISED BEEF WITH VEGETABLES | |
Sprinkle 3 pounds beef round or shoulder with 4 teaspoons salt and 1 teaspoon pepper. Dredge with flour. Brown well in fat or oil. Place meat in deep pan and surround with 1 cup diced carrots, 1 cup diced turnip, 1 cup chopped onion and 1 cup chopped celery. Combine and pour over top of meat: 2 1/2 c. hot water 1/2 c. ketchup Cover closely and bake in a slow oven, 350 degrees, about 2 hours. Turn meat once during cooking. Bake whole peeled potatoes around meat the last hour. If sauce around meat is not thick, continue cooking on top of stove after removing meat and vegetables or thicken slightly with flour blended with water. |
