ZUCCHINI SLAW 
1/2 c. mayonnaise
3 tbsp. white wine vinegar
1 tbsp. sugar
1 tsp. caraway seed
4 c. shredded zucchini
1/4 c. thinly sliced green onion
3 lg. crisp apples, cored & diced
Salt & freshly ground black pepper

Combine the mayonnaise, vinegar, sugar, and caraway seed in a small bowl; whisk thoroughly. In a large bowl, toss the zucchini, onions and apples together. Pour the dressing over the zucchini mixture and season to taste. Cover and chill for 2 to 4 hours. Serves 8.
