1 lb. fettucini 1 c. onion 1 c. tomato (pulped) 4 eggs 8 oz. butter 1 c. bread crumbs 2 tbsp. crushed garlic 1 c. pepperoni 1 c. peppers 1/4 c. white wine 1/4 c. milk 1 c. cream 24 zucchini croutons 1 tbsp. oregano Choice of: 24 lg. shrimp, 4 fish filet or 4 lg. chicken breasts (boned) 1 c. Parmesan Salt & pepper Mix eggs and milk. Dip zucchini in mix then roll in bread crumbs. Cook pasta until not quite done. Julienne all vegetables and meat, then saute in butter with salt and pepper, garlic and oregano until tender. Add wine and reduce. Add cream and reduce again. Add 1/2 Parmesan cheese. Mix in pasta. Fry croutons. Shrimp - saute with garlic, salt and pepper. Chicken or fish - bread as with croutons and fry. Place pasta in center of plate. Put 6 croutons around edge of pasta. If using shrimp, put 1 on each crouton. Chicken or fish, put in center of pasta. Pour any excess sauce over middle. Garnish with chopped chives or parsley and remaining Parmesan cheese. |
