HOT MILK CAKE | |
When I was a little girl, my mother always washed on Mondays. Even on this busy day, she thought we had to have a dessert for supper so she often made this cake because it was quick. We had it so often on wash say that we called it "Wash Day Cake." This is a small recipe, just double it for a large cake. 1/2 c. milk 1/2 stick butter 1/ c. flour, plain 2 eggs 1/2 tsp. vanilla 1/2 tsp. lemon flavoring Pinch of salt 1 tsp. baking powder A dash of nutmeg (optional) Put milk and butter in a saucepan and heat until butter is melted, but do not boil. Beat eggs until light and fluffy (Mama always used a hand turned egg beater, but use a whisk or fork if you don't want to get out your mixer). Add sugar and flavoring to eggs and beat well again. Sift together flour, baking powder and salt and add to egg mixture and blend well. All this can be mixed with your mixer. This batter will be very thin. Pour into a well greased 9x13 inch pan and bake in a 350 degree oven for about 30 minutes TOPPING: 1 c. shredded coconut 5 tbsp. brown sugar 6 tbsp. evaporated milk (regular milk can also be used) 6 tbsp. butter Pinch of salt Melt butter in a saucepan (you can use the same one you used before). Dissolve sugar in butter. Add other ingredients. Bring to a good boil and spread on hot cake when it comes out of the oven. Mother always made this cake in a pan that had handles so I was about half grown before I realized that it could be made in a regular pan. |
