POACHED FISH FILLETS 
4 cod fillets (1 lb.)
2-3 c. water
Bay leaves as desired
Peppercorns as desired
1 tsp. salt
Fresh parsley as desired
1/2 med. onion, sliced
Lemon slices as desired

Cut fish into 4 serving pieces if necessary. Put all ingredients except fish in skillet. Simmer for 5 minutes. Add fish; simmer gently 4 to 6 minutes or until fish flakes with fork. Do not over cook. 105 calories per 1/4 recipe.
