APPLESAUCE MUFFINS | |
2 sticks butter 2 eggs, beaten 2 c. sugar 1 tsp. vanilla 4 c. plain flour 1 tsp. cinnamon 1 tsp. cloves 1 tsp. allspice 1 c. raisins 1 tbsp. baking soda 1 c. chopped pecans 3 c. applesauce Mix together butter and sugar until smooth. Add eggs and vanilla. Sift flour, soda and spices and add to mixture. Add raisins, pecans and applesauce. Mix until all ingredients are smooth. Pour into muffin tins and bake 400 degrees for 20 minutes. Batter will keep in refrigerator up to 2 weeks. |
