BAKED SCALLOPS 
3/4 lbs. scallops
1/4 c. fresh parsley
4 gem (Ritz) crackers, crushed
2 tsp. butter
1 clove garlic minced
Salt and pepper, to taste

If scallops are large, cut in half. Combine scallops, parsley, and cracker crumbs. Melt butter and saute garlic for 2 minutes or until lightly brown. Add garlic butter to scallop mixture. Season with salt and pepper to taste. Turn into small, shallow casserole. Bake at 350 degrees for 20 to 25 minutes or until scallops are opaque and crumbs are browned.
