SUNSHINE PICKLE 
4 qts. ripe cucumbers (seeds removed, cut fine and peeled)
1 lg. green sweet pepper (seeds removed)
1 lg. red sweet pepper (cut in strips)
6 onions (cut up fine)
Vinegar
3 c. white sugar
Turmeric powder

Cover all with cold water in a large kettle with 2 tbsp. salt sprinkled over it. Let sit overnight. In morning bring to a boil, in same water, then drain well. Barely cover with vinegar, add 3 cups white sugar and 1 rounded tsp. turmeric powder. Cook until soft (not mushy) and seal in jars at once. (Can use one jar of pimento cut in strips in place of red sweet pepper).
