FIESTA RICE AND PEAS 
1/2 c. chopped onion
1 clove garlic, minced
2 tbsp. butter
1 1/2 c. cold water
1 1/2 c. quick cooking long grain rice
1 (10 oz.) pkg. frozen peas, thawed
1/2 c. shredded carrots
1/2 tsp. saffron threads
2 crisp cooked bacon slices, crumbled

Saute onion and garlic in butter until tender, stirring frequently. In 2 quart saucepan, bring water to boil. Add all ingredients, except bacon. Cover and remove from heat. Let stand 5 minutes. Top with crumbled bacon. This is very good.
