PECAN PIE 
1/2 cup (1 stick) butter
1 cup light brown sugar
3 slightly beaten eggs
3/4 cup light corn syrup (Karo)
1/2 tsp. salt
1 tsp. vanilla
1 1/2 to 2 cups chopped pecans
2 unbaked pie shells (I use Pillsbury crusts)

Preheat oven to 375°F. Prepare two pie shells.

Using a stand mixer, cream butter. Add sugar gradually. Add rest of ingredients. Mix well. Pour into prepared pie shells.

Bake in 375°F oven for 40 minutes.

Makes 2 pies.
