LUSCIOUS LEMON BARS 
2 c. flour
3/4 c. butter, softened
1/2 c. confectioners' sugar
4 eggs
1 1/2 c. sugar
1/4 tsp. salt
1/4 c. lemon juice
1/4 c. flour
1 tsp. baking powder
1 tbsp. grated lemon peel

Combine 2 cups flour, butter and confectioners' sugar. Mix until crumbly. Press into an ungreased 13 x 9 x 2 inch pan. Bake at 350 degrees for 20 minutes until slightly browned.

Beat eggs, sugar, salt and lemon juice with electric mixer on medium speed for 2 minutes. Add flour, baking powder and lemon peel. Beat 1 minute. Pour over hot crust. Bake at 350 degrees for 20-25 minutes until lightly browned. Cool in pan on rack. Makes 32 bars.
