BEEF TENDERLOIN 
4 lb. tenderloin
Soy sauce
Butter

Remove meat from refrigerator and marinate one hour with soy sauce rubbed in. Remove any surplus fat and place fat side up in a roasting pan. Spread top of tenderloin generously with butter. Bake in a preheated 500 degree oven. Reduce temperature to 400 degrees when put meat in.

Cook approximately 35 minutes. May insert a meat thermometer in the thick meat before cooking and let it cook until 140 degrees. Rare. Take out and let sit 15 minutes before slicing. Serve immediately with Horseradish sauce.
