SWEET POTATO BISCUITS 
1 1/3 c. self-rising flour
2 tsp. brown sugar
1/3 c. shortening
1 beaten egg
1/2 c. mashed, cooked sweet potato
2 tbsp. milk
Butter, melted

Preheat oven to 425 degrees. Stir together flour and brown sugar. Cut in shortening until mixture forms coarse crumbs. Beat together the egg, sweet potato and milk, and add to dry mixture. Stir just until dough clings together.

Turn out onto floured surface and knead 10 to 12 times. Roll 1/2 inch thick and cut with biscuit cutter or glass dipped in a little flour. Place on an ungreased baking sheet, brush with melted butter and bake for 10-12 minutes, 425 degrees.
