CHOCOLATE CHIP COCONUT BARS 
2 eggs
3/4 c. packed light brown sugar
1/2 c. flour
1/4 tsp. salt
1/4 tsp. baking soda
1 tsp. vanilla
1 c. shredded coconut
1/2 c. semi-sweet chocolate pieces

Beat eggs and sugar until smooth, beat in flour, salt, soda, vanilla and coconut. Turn into greased 8 x 8 x 2 inch pan. Sprinkle with chocolate pieces. Bake in preheated 350 degree oven for 25 minutes or until pick inserted in center comes out clean. Cool completely in pan or rack. Cut into 18 bars.

We love this recipe! Fast to prepare! The end result might not yield enough for a large family, but since rich and yummy it satisfies us. The first time we prepared this, we didn't have baking soda on hand so we used 1/2 tsp. baking powder and omitted the salt - worked great!

They were OK - more cake-like than cookie-ish. I was expecting more of a chocolate chip cookie bar. I sprinkled additional chocolate chips on top of when I took the pan out of the oven and spread them around for frosting.
