CHICKEN FRICASSEE 
4-5 skinless boneless chicken breasts
1 stick butter
2 c. croutons
Sliced Mozzarella or Swiss cheese
1 can cream of chicken soup
1/4 c. water

In an 8 x 8 inch casserole dish place the chicken, then salt and pepper as desired. Lay cheese over chicken enough to cover. In saucepan melt the butter then add croutons until they are well coated. Put this mixture on top of the cheese. In a bowl mix the soup and 1/4 cup water breaking up the lumps. Pour this over croutons. Bake at 375 degrees for 1-1 1/2 hours.
