CARAMEL ROCKY ROAD BARS | |
CRUMB MIXTURE: 1 c. flour 3/4 c. quick cooking oats 1/2 c. sugar 1/2 c. Land O'Lakes butter 1/2 tsp. baking soda 1/4 tsp. salt 1/4 c. chopped salted peanuts FILLING: 1/2 c. caramel ice cream topping 1/2 c. salted peanuts 1 1/2 c. miniature marshmallows 1/2 c. milk chocolate chips Heat oven to 350 degrees. For crumb mixture: In mixing bowl combine flour, oats, sugar, butter, baking soda and salt. Beat at low speed, scraping bowl often, until mixture is crumbly, 1-2 minutes. Stir in nuts. Reserve 3/4 cup crumb mixture. Press remaining crumb mix on bottom of greased and floured 9 inch square pan. Bake 12-17 minutes until lightly browned. For Filling: Spread caramel topping evenly over hot crust. Sprinkle nuts, marshmallows and chocolate chips over top. Crumble 3/4 cup reserved crumb mix over top. Continue baking 20-25 minutes, or until crumb mix is lightly browned. Cover, refrigerate 1-2 hours, or until firm. Cut into bars. Makes 2 1/2 dozen bars. |
