CARROTS & CHEESE 
1 lb. sliced carrots
1/4 lb. shredded Velveeta cheese
1 med. onion, chopped
Ritz cracker crumbs
1 stick butter

Cook sliced carrots until tender. Layer in casserole with Velveeta cheese. Saute onion in butter and pour over carrots. Sprinkle with cracker crumbs. Bake at 350 degrees for 30 minutes covered.
