CREPES 
BATTER:

1 c. flour
1/4 tsp. baking powder
1/4 tsp. salt
1 1/4 c. milk
1 egg
1 tbsp. melted butter

FILLINGS:

Fruit and whipped cream
Or chicken

Mix flour, baking powder and salt. Then stir in remainder of ingredients. Beat with hand beaters until smooth.

Lightly butter 7 or 9 inch skillet. Heat until bubbly. For each crepe, pour scant 1/4 cup of batter. Immediately rotate skillet until thin film of batter covers bottom. Cook until light brown.

Run wide spatula around edge to loosen, turn and cook other side until light brown. Stack crepes, placing waxed paper or paper towel between each.
