OVEN SCRAMBLED EGGS 
100 eggs, beaten lightly
1/2 lb. butter
3 qts. milk
3 tbsp. salt
1/2 c. lemon juice

Heat butter, milk, salt and pour into eggs. Cool to lukewarm add lemon juice. Bake at 350 degrees for 1 hour or until done. The fuller the pan, the better the eggs. Stir once. NOTE: The lemon juice prevents the eggs from turning green while serving.
