CARAMEL TARTS 
2 c. brown sugar
1/4 c. plus 1 tbsp. flour
2 c. milk
4 egg yolks
4 tsp. butter
1 1/2 tsp. vanilla

Beat yolks, add sugar mixed with flour, stir in milk and cook until thick, stirring constantly. Add butter and vanilla, remove from heat. Pour into baked tart shells or pie crust. Top with meringue and brown 8 to 10 minutes at 375 degrees.

MERINGUE:

Beat egg whites, dash of salt and 1/4 teaspoon cream of tartar until soft peaks form. Add 6 tablespoons sugar, one at a time, beating all the time until stiff peaks form.
