PEANUT BUTTER COOKIES | |
1 c. (2 sticks) unsalted butter, room temperature 1 c. chunk style peanut butter 2/3 c. flavorful honey 1 c. packed dark brown sugar 2 eggs 1 tsp. vanilla 2 1/2 c. all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 c. unsalted roasted peanuts, coarsely chopped Preheat oven to 350 degrees. Cream butter until soft, then beat in the peanut butter until the 2 are combined. Beat in, in turn, the honey, brown sugar, eggs, and vanilla. Sift together the flour, baking powder, baking soda, and salt. Fold the flour mixture into the creamed mixture, then stir in the chopped peanuts. Measure dough by rounded measuring tablespoons onto an ungreased baking sheet. Bake 11 to 13 minutes. Let cool and firm up on baking sheet for 5 minutes. |
